Tuesday Afternoon
  • Arrive at the Abbondanza Abruzzese Cooking School in Civitella del Tronto. Check in and enjoy the superb views from your room or the picture-postcard town square outside the front door. Relax, tonight the two chefs will cook in your honor.

Wednesday, Thursday & Friday
  • After a hearty breakfast, the day begins with lessons on the importance of ingredients by visiting the area's best producers. Spring or summer sessions visit a highly rated, organic farmstead or cheese producer. Fall classes are more likely to stop at vineyards or an extra virgin olive oil fattoria. All participants enjoy a trip to the farmer's market and a guided tour of Ascoli Piceno with a special treat at Caffè Meletti, a historic cafĂ© renown for their aperitifs. Lunch, depending on the day trip schedule is either taken picnic style or at a local trattoria.

  • Afternoons are reserved for hands-on instruction in the kitchen as you perfect each recipe. Copies of every recipe are available in English to take home. The courses focus on: creative antipasti, first courses of hand made pasta, succulent main dishes and out of this world desserts. Each session revolves around the freshest seasonal products available at the moment of your arrival.

  • The evening meal is a feast you helped create, accompanied by fine wines and aperitifs. During the Friday night Gala Dinner, participants are presented with their chef's hat and apron, and the most promising apprentice is awarded the distinction of becoming "Abruzzo's Next Chef". This festive evening, weather permitting, is celebrated in the main square with traditional folk music.

Saturday Morning
  • Breakfast & departure. (Perfect timing to embark on a Parker Villa rental for the coming week armed with recipes, shopping tips and lots of insider knowledge.)
